PRIORITY VIOLATION-5-205.15 (A), P: System Maintained in Good Repair; According to Law Dish washer is in disrepair and three compartment sink has a rinse sink that is blocked and waste water can not be drained. Per manager grease trap has to be cleaned in order to repair the sink and is scheduled to be cleaned this Monday. In addition a plumber is schedule to drained the sink. Establishment is using single service plate and containers for constumers that will be discarded after use. For pans and pots and holding containers, advised manager to use two compartment sink, one for washing with soap and rinse and the second sink to be full with sanitizer for sanitizing dishes.
