Observed raw hamburger and raw sausages stored above cooked chicken in the bottom of the prep cooler. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. Employee properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. As per cook, the chicken was prepared today and placed in the walk-in to cool. The internal temperature range at time was 62-65F. Explained to the cook, a food item should not be covered, that are actively cooling; until after the food has reached 41F or below. Once the proper temperature of 41F or below is achieved, the food item can be covered. Employee removed the lid from the cooked chicken, to continue cooling to 41F or below. Foods must be cooled from 135F-70F in the first 2 hours and from 70F-41F in the next 4 hours for a total of 6 hours. Correct By: Corrected At Time Of Inspection
