Observed the following TCS foods being dated: salsa (2/5), Mozzarella cheese (2/1), bratwurst (2/5) and sauerkraut (12/5). RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed the dishwashing station being used but dispensing a chlorine sanitizer level of 0 ppm. Person in charge states they will get it fixed as soon as possible. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels (chlorine 50-100ppm). Reinspection will be conducted on or before 10/21/2024. Corrective Action: Correct prior to re-inspection.

All RTE/TCS foods were properly date marked at the time of inspection except for the meatballs which were voluntarily disposed of at the time of inspection.
