Inspector's notes

Observed corn dogs and containers of shredded/crumbled cheeses with internal temperatures measuring between 48°F and 50°F in prep table cooler across from fryer. Ambient air temperature measured 45°F on hanging thermometer. Per manager, items were placed in unit less than 2 hours prior. Discussed keeping lids closed of prep cooler when not actively in-use. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed TCS food items with internal temperatures of 48°F in prep table cooler with ambient air temperature measuring 45°F. Manager will call technician to repair the unit. The prep cooler will not be used until it is repaired and holding ambient temperature below 41 degrees F. Establishment has sufficient cooler capacities to operate safely until the cooler is repaired. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
