Corrective Action: Corrected at time of inspection. Mashed potatoes in hot well, under temperature control per manager, at 111*F internally. Manager stated potatoes had been on the line for about one hour and opted to discard them. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above.
