Raw marinated chicken item stored directly behind a container of raw burger patties causing the chicken to go directly over the beef when prepped in the cooler drawers in the cookline area. ( *The burger patties had parchment paper covering them. )PIC relocated the items. Ensure that FOOD is arranged in EQUIPMENT so that cross contamination of one type with another is prevented. Observed an accumulation of food debris on the blades of the dicer/punch stored as clean in the back prep area. According to PIC, the equipment is used to cut cucumbers and placed it into the dish room to soak and be rewashed. Discussed inspecting equipment prior to storing to ensure that all food and soil have been removed. Equipment food contact surfaces and utensils shall be clean to sight and touch. Corrective Action: Correct prior to next routine inspection.

Observed grill employee directly touch raw beef hamburger with right gloved hand. Employee then grabbed glove from floor with left hand. With both contaminated hands employee put on new gloves. With contaminated gloved hands employee proceeded to directly touch cooked bacon. Notified Person In Charge (PIC). PIC directed employee to take off contaminated gloves and wash contaminated hands appropriately. ====Employee not washing hands between working with raw food and RTE food. Corrective Action: Corrected at time of inspection.

In the walk-in cooler a large bucket/container of potato soup had an internal temperature of 62*F. The person in charge (PIC) verified the food temperatures using the establishment thermometer. The PIC stated the food item was made the previous day. The food item failed to cool to 41*F within 6 hours. The food item was embargoed and voluntarily discarded by Person in charge (PIC) at the time of inspection. Food must be cooled from 135*F to 70*F within 2 hours, then from 70*F to 41*F in next 4 hours (6 hours total). Suggested PIC to reduce large amounts of food into smaller portions. Also, cool foods on top shelves in reach-in cooler and leave container uncovered. Utilize ice bath if possible or place food in the freezer to enhance cooling process.
