Corrective Action: Correct prior to next routine inspection. 6-501.111 (A-B, D) - Core: Controlling Pests; Monitoring Addl Notes: *SECOND CONSECUTIVE VIOLATION* Old rodent droppings in the cabinet under the 3-compartment sink. Did not observe any fresh droppings or live pest activity at the time of inspection. The PIC stated a certified pest control technician will perform pest control services for truck within the next week, and they will provide the report to MCESD once completed. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Corrective Action: Correct prior to next routine inspection.

Outer openings of a food establishment shall be protected against the entry of insects and rodents by: o Filling or closing holes and other gaps along floors, walls, and ceilings; o Closed, tight-fitting windows; and o Solid, self-closing, tight-fitting doors Corrective Action: Correct prior to next routine inspection. 6-501.111 (A-B, D) - Core: Controlling Pests; Monitoring Addl Notes: -- In cabinet under 3-compartment sink and storage cabinet nearby, observed old rodent droppings. Did not observe any fresh droppings or live pest activity at the time of inspection. The PIC stated a certified pest control technician will perform pest control services for truck within 2 weeks, and they will provide the report to MCESD once completed. At the time of inspection, the PIC instructed an employee to deep clean/remove all droppings from the truck. At time of inspection, two employees donned gloves to handle ready to eat foods without a proper handwash after contamination. Employees removed gloves, washed hands, and donned new gloves to continue with tasks. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands are to be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

In tall reach in refrigerator, open container of raw hamburger stored over bottled water and soda. Instructed employee to rearrange shelves so that container of raw hamburger is stored below bottled water. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.
