Observed a can of tomato sauce with dent in top seam in dry storage area. Swollen, rusted and cans dented on any of the 3 can seams (top, bottom, side) or deep, sharp dents should be considered unsafe. PIC separated the damaged cans. A designated area will be used to store damaged cans until removal from the establishment. All food must be in good condition, safe, and unadulterated. Per PIC the potatoes were cooked and place in refrigeration 15 minutes before inspection with an internal temperature of 150*F. Discussed with PIC for potatoes to be cooled they shall be arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food. All items should be cooled in uncovered, shallow pans in the walk-in, by using an ice bath, or another effective means. Foods must be cooled from 135'F-70'F in the first 2 hours and from 70'F-41'F in the next 4 hours for a total of 6 hours. PIC took foil off of the potatoes and put in the walk-in to rapid cool. Observed burrata, bacon wrapped sausages, bacon aioli, calabria chili aioli, caesar dressing with sardines, romesco sauce, and pomodoro sauce at 47-52*F in walk-in. Walk-in observed at 44-45*F at time of violation. PIC stated that technician was replacing a fuse on the roof for the walk-in at 1pm and stated walk-in was still cooling down. Items being actively cooled in walk-in were moved to beer walk-in at time of violation. Observed walk-in at 39-40*F by end of inspection. PIC stated all items had been in walk-in since yesterday or beyond. PIC voluntarily discarded all items. TCS items must be held at or below 41*F to prevent growth of pathogens.
