The pork had not been removed from the walk-in today. PIC stated the pan used for cooling was too deep and it should have been placed in a shallower pan for proper cooling. PIC discarded the pork.

Observed cold orzo salad in rectangular 6inch metal pan on prep line with an internal temperature of 46-50*F. Metal pan sitting on top of a bed of ice without water, pan not submerged. Person in charge stated food was prepared within 2 hours of inspection and was actively cooling. Food was then completely submerged in ice bath and stirred frequently to ensure cooling. Temperature dropped to 43-46*F within 15 minutes and continued to drop. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers.
