Inspector's notes

Various TCS food items such as hard boiled eggs, deli meat sandwiches, chicken wraps, egg salads, and others found with internal temperatures of 41-50*F in the grab-and-go cooler. The cool appeared to be designed to only have 1 later of product on the bottom shelf and products were stacked atop each other which may have caused them to be higher in temperature. PIC discarded the food products on the bottom shelf of the cooler. The top portion of the cooler was holding at 41*F or below.

Observed freshly prepped parfaits, salads, and salad sandwiches, tightly sealed, stacked, actively cooling in open display case. Equipment not designed for cooling, only holding at 41*F and below. Person in charge removed items, placed on ice bath in walk-in refrigerator for quick cooling. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers.
