An E&D permit shall be applied for on permit center to continue using and serving ice cream.

Inspector's notes

Observed strawberry ice cream mix in ice cream machine in left compartment have an internal temperature of 53*F. PIC stated ice cream is made with plain or strawberry flavoring and milk. PIC stated strawberry ice cream mix was made yesterday and unsure how long it had been out of temp. Plain ice cream mix in right compartment of ice cream machine measured 42*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed 8 gallons of milk in wall fridge located on south wall have an internal temperature of 55*F. Person in charge stated that unit was broken at 12pm today when it was noticed and it had been working the night prior to inspection. PIC was unsure when the unit went out of temp. Unit has an ambient temperature of 60*F. All TCS foods improperly cold held were discarded by PIC at time of inspection. TCS foods including milk must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
