Observed potato salad, tuna salad, and chicken salad in metal pans on counter, being used to prep plates with an internal temperature of 52-54*F. Cook stated foods were sitting at room temperature for the entire meal service (2 hours) and is intended to be saved for later use. Person in charge had staff place foods on ice bath and reached an internal temperature of 45*F within 30min and still dropping. PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding.
