Observed a spatula and cutting knife stored in crevice between the make-line unit and a countertop for the tortilla press. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were replaced and properly stored at time of inspection. Corrective Action: Corrected at time of inspection.

Tomato and onion dicer observed with food debris (Encrusted tomato residue) between blades found on clean storage shelf. PIC placed the dicer at the 3 compartment sink to be washed, rinsed and sanitized before placing in clean storage. Also observed food debris in food containers that were stored as clean on the storage rack above the 3 compartment sink. Please ensure food contact equipment is properly cleaned and sanitized before being placed in clean storage for future use. Food contact equipment shall be clean to both sight and touch. Corrective Action: Corrected at time of inspection.

Observed multiple container of cooked meats (chicken and beef) and a container of Pico de Gallo being cold held inside the walk-in cooler with no date marks. Per Person In Charge (PIC), all products were prepared a day prior to this inspection. PIC placed adjusted date mark stickers on all containers at time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
