Per PIC, the tilapia was prepared at a commissary kitchen and delivered to the establishment about 2-3 hours prior to inspection. The tilapia was reheated to 165'F at the time of the inspection. Discussed proper hot holding with the PIC. All food held hot must be maintained at 135'F or above at all times.
