PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. ==== Observed high temperature dish machine in use with ambient temperature of 141*F-150*F with min/max of establishment and inspector min/max thermometer. Attempted 5 separate times and moved setting to #2. Still unit is not able to meet 160*F to heat sanitize food plates and cups. Notified Person In Charge (PIC). PIC will close down dish machine and switched to three compartment sink to re-wash, rinse, and sanitize listed cups and plates. ======Ambient temperature of high temperature dish machine needs to be above 160*F.
