Establishment only has quaternary ammonium (quat) test strips available. Per person in charge (PIC), establishment uses a chlorine sanitizer (i.e. bleach) for sanitizing food contact surfaces. Test strips are required for any sanitizers used with food contact surfaces. Food contact surfaces for TCS foods must be scraped or pre-rinsed, washed, rinsed, sanitized, and air dried. Chlorine sanitizer solution concentrations must be maintained at 50-100ppm. Corrective Action: Correct prior to re-inspection. Re-inspection is tentatively scheduled for 5/14/2026.

Observed 3 sets of tongs left hanging on metal racks in the fryer area with visible food debris and grease residue on the food-contact surfaces. Per PIC, the tongs were not cleaned after yesterday's service. Discussed cleaning frequency with PIC. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed tzatziki sauce stored inside the sliding-glass door display cooler located in the food assembly area, with a prep date of 6/19/2025 at time of inspection. Also observed white cream sauce labeled with an expiration date of 8/11/2025 at time of inspection. Discussed revising and adhering to a standard date-marking system with PIC. All RTE/TCS foods were properly date marked at the time of inspection. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Observed two cans of Raid pesticide being stored in the dry storage area next to the 2-door standing refrigerator in the warewashing area. Discussed active pest control with PIC. Per PIC, these cans were not in-use and they confirmed having active pest control for the establishment. All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection. Corrective Action: Corrected at time of inspection.

Observed cut cabbage (64'F), and cooked hot dogs (63'F) being stored in the prep table in the main kitchen area. PIC was unsure of when these items were placed in the prep table. All TCS foods improperly cold held were discarded by PIC at time of inspection. Discussed proper cold holding and proper food storage in the prep table to allow for adequate air flow. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
