Inspector's notes

Observed various temperature control for safety items such as cheese, chicken sandwiches, and smoothies in the grab-n-go cooler. These items were voluntarily discarded - see embargo list for details. Ambient temperature of unit measured 54*F at time of inspection. Discussed cold holding requirements, instructed PIC to discontinue use of unit for TCS foods until in good repair. Alternative refrigeration is available to operate safely. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed in open grab and go cold holding case at an ambient temperature of 63*F measured with a min/max. Observed several TCS items with an internal temperature of 48*F to 63*F. Per Person in Charge (PIC) the TCS items in the unit for less than 4 hours were the market sandwiches and slim jims with pepper jack cheese. These items were relocated to adequate refrigeration to properly cool. TCS items that were in the unit for more than 4 hours were embargoed and PIC discarded at time of inspection. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Discarded embargoed items are: Chocolate milk (single serve and half gallon), strawberry milk (single serve and half gallon), whole milk (single serve and half gallon), key lime yogurt, blueberry yogurt, sour cream, lunchables (turkey/cheddar, chicken dunks, pizza w/pepperoni), Hillshire small plates (hot calabrese salame, italian dry /cheese, wine infused salame, genoa salame), Slim jim meat and cheese (salami w/ pepperjack, genoa salami w/ mozzarella, uncured pepperoni w/ cheddar, spicy salami w/ mozzarella, hard salami) Items labeled 'keep refrigerated': Oh Snap! (cranberry sweeties, pickled carrots, pickles), Delight creamers ( Hazelnut, French Vanilla, Hershey, Wedding cake and Pistachio ) Corrective Action: Corrected at time of inspection.

PIC turned on and off the unit and the ambient temperature of the unit was 41*F by end of inspection. Corrective Action: Corrected at time of inspection.
