Observed raw tuna, raw salmon, leafed lettuce, crab salad sitting out during preparation. Temperatures ranged from 54-62F degrees. Inspector asked if there was a time as a control policy in place for said items but none could be provided. Chef stated items had been out less than 2 hours. Chef moved items back into reach-in cooler. All Temperature control for safety TCS items must be maintained at or below 41 degrees. Correct By: Corrected At Time Of Inspection
