Inspector's notes

Observed the three-compartment sink set up with dishes in the sanitizer compartment. When tested, the chlorine concentration of the sanitizer was 0 ppm. The bottle of sanitizer being pumped was empty. PIC replaced the bottle and remade the sanitizer compartment, it was too high of a concentration, so hand dosing was done instead. PIC made the sanitizer with the proper concentration, 50-100ppm and re-sanitized the dishes that were previously being sanitized. PIC agreed to not use the pump system until it is serviced to release the correct concentration level. PIC will hand dose chlorine sanitizer. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces sanitized using chlorine sanitizer must be sanitized with a contact time of least 10 seconds. Food-contact surfaces were properly sanitized at time of inspection.
