Inspector's notes

Upon arrival, I observed the manager in charge vacuum packaging fresh fish received the same day and placing them in freezer. Discussed Reduced Oxygen packaging is not authorized for fish and other kinds of meat request for variance from the department is required If the product is not used within 48 hours. fish were removed from their ROP packaged, moved to the original box, and stored in the freezer. Please submit a variance application if Reduced oxygen packaging is going to be used for any potentially hazardous food time/temperature required food for more than 48 hours.
