The permit holder is responsible for ensuring that their menu items comply. Education was provided on the addition of food additives and dietary supplements during the inspection. For additional information, please refer to the ADHS Kava and Other Dietary Supplement Products Letter at https://www.azdhs.gov/preparedness/epidemiology-disease-control/food-safety-environmental-services/index.php.2. Establishment possesses retail area that operates in conjunction with the E&D. PIC stated that before/after hours and weekends, the refrigerated units are accessible to the workers who have badge access. The unit has TCS foods stored inside, such as salads and sandwiches, and is not equipped with a self-locking mechanism. Discussed with PIC that the refrigerator needs to be locked or the TCS foods removed from the unit when the cafe is not open. A micro market permit is required for units that are to be left unattended, and these units must be equipped with a self-locking mechanism. Discussed with PIC that there are third-party companies that supply and stock micro markets. 3. Discussed menu with PIC. Requested additional information regarding menu and procedures to be sent via email. 4. Reviewed how to set up three-compartment sink and use sanitizer test strips with PIC.
Inspector's notes
No Certified Food Protection Manager was available onsite at time of inspection. PIC stated that they are in the process of obtaining the certificate. A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.

Inspector's notes
Observed two flats of raw shell eggs stored over sliced and shredded cheeses in the below counter reach-in. Informed PIC that all raw animal proteins must be stored below all ready-to-eat foods. PIC properly stored the eggs and cheese at time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.
