Observed all TCS foods in 2 door fridge in kitchen above 41*F. Person in charge (PIC) stated items had been in the unit overnight and unsure when the unit was holding temperature. TCS items include 2 boxes of yogurt (48*F), 2.5 boxes of cream cheese (50-55*F), 2 boxes of precooked bacon (51*F), 33 packages of precooked scrambled eggs (48-50*F), and 5 gallons of milk (52-52*F).Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Establishment relies on this unit to operate breakfast service with no other adequate refrigerator available. Corrective Action: Correct prior to re-inspection. 24 hour re-inspection required.
