Employee stated they had tested the dishwasher sanitizer concentration one hour before the inspection time. The bar dishwasher was being actively used but was not dispensing sanitizer properly. Discussed testing procedures and frequency. Dishes will be washed, rinsed, and sanitized in the three-compartment sink until the dishwashers are repaired. PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. --Observed multiple TCS food items (such as shrimp, cut tomatoes, and macaroni salad) in the walk-in and 2 prep-top coolers at the time of inspection. The walk-in door does not automatically close completely, so food that was near the walk-in door had internal temperatures between 45-47°F. The ambient air temperature of the walk-in refrigerator was 40°F at the time of inspection and other items in this unit were below 41°F. The two prep coolers had ambient air temperatures of 38°F and 41°F. TCS food in these units were between 41-53°F. The Person in Charge (PIC) provided temperature logs stating that food in the walk-in unit and in the prep coolers had internal temperatures below 41°F less than 4 hours before inspection time, so food was moved to the walk-in refrigerator to cool down. PIC stated they are aware of an issue where employees leave the walk-in door open as well as leaving doors open on the prep-cooler when not in use. Discussed cold holding policies and public health risks. Also discussed calibrating thermometers, monitoring temperature more frequently, and ensuring equipment doors are completely closed when not in use. Ensure all food being maintained by cold holding has internal temperature of 41°F or below at all times. Correct By: Corrected At Time Of Inspection
