Inspector's notes

Observed cut lettuce and spinach at 48°F-52°F in open cooler prep line. Person in Charge (PIC) stated that all items in prep line were removed from walk in at 8:00am. PIC moved cut lettuce and spinach to walk in cooler, and items were temped 30 minutes later at 41°F. Discussed with PIC to fill in gaps of the cooler to help keep Time/Temperature Control for Safety (TCS) products at temp. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Working containers used for storing poisonous or toxic materials such as degreaser shall be clearly and individually identified with the common name of the material. Corrective Action: Corrected at time of inspection.
