Inspector's notes

Observed two wooden spoons used for removing doughnuts from the fryer, dark and discolored with cracks and chips in the wood. Discussed with PIC that wood should not be used as a food contact surface unless it is close-grained and sealed. Discussed with PIC that the spoon wood is porous and absorbent. Discussed the importance of being able to properly clean food-contact surfaces. Wood and wood wicker may not be used as a food-contact surface. Hard maple or an equivalently hard, close-grained wood may be used for cutting boards; cutting blocks; bakers' tables; and utensils such as rolling pins, doughnut dowels, salad bowls, and chopsticks; and wooden paddles used in confectionery operations for pressure scraping kettles when manually preparing confections at a temperature of 110oc (230of) or above. Corrective Action: Correct prior to next routine inspection. 4-101.19 - Core: Nonfood-Contact Surfaces Addl Notes: Observed cardboard being used on shelving below containers of shortening with grease build up. Informed PIC that cardboard may not be used in the construction of an establishment due to it being absorbent and not easily cleanable. Discussed preventing pests with PIC. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. Corrective Action: Correct prior to next routine inspection.
