The cheesecake comes in various flavors and contains cream cheese and sour cream. The cheesecakes are labeled for greater than seven days, current ones are labeled 11/13. PIC stated that the cakes were received six days prior to inspection. Informed PIC that the cakes contain TCS ingredients which must be sold or discarded within seven days of preparation. Discussed proper labeling requirements with PIC. Inspector's notes

Observed the mechanical ware washing machine in the main kitchen with a chlorine sanitizer concentration of less than 25ppm. PIC informed that the company that services their machines came earlier and stated it was working. Upon, further inspection the plug for the sanitizer was out of the bottle, causing air bubbles in the line. PIC replaced the plug securely, primed the machine, and ran a new load. Chlorine concentration level was 50-100ppm. Instructed PIC to run the loads of dishes that were previously washed to ensure they are properly sanitized. PIC instructed employee to re-sanitize the dishes. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Corrective Action: Corrected at time of inspection.

PIC stated that it had been put in the unit about two hours prior. Instructed PIC to place the lettuce in a walk-in to rapidly cool down to 41*F, before being placed back in a holding unit. PIC moved the lettuce to the walk-in refrigerator. PIC agreed to discontinue use of the countertop unit for TCS foods until the unit can hold TCS foods at 41*F or below. The establishment is approved to follow the outer opening exemption guidance documents. If the facility fails to control pests’ presence inside the facility the outer exemption shall be removed and air curtains/ screens, or doors shall be provided at all outer opening.Food operating permit is approved.Currently the dog friendly patio is not approved. Noted a smoker is chained to the light post outside of the facility. Per chef, the establishment will not use the smoker. Please remove the equipment if not use. An outdoor food operation application is required prior to conducting outdoor food service. Provide guidance document for outdoor food.Please address the following items prior to the next inspection:1. Provide a vented dual check valve (ASSE 1022) at the water connection point of the coffee/ tea brewer and the espresso machine. The one provided is a dual check valve (ASSE 1024); which is not acceptable.2. Fill expansion joints on the concrete pads of the dog friendly patio, then seal the floor with several coats of marine grade sealant. Water must bead-up on the floor.3. Provide DOG FRIENDLY PATIO SIGN at the entrance to the patio area.4. Provide an updated IPM plan from a licensed pest control company. The facility must provide Active Managerial Control (AMC) documents: monitoring logs, policy, and procedure have not been provided from the facility’s management team. Provide door/ window activated air curtains over the roll-up door, delivery door and window. Dumpster is less than 10 feet away from the delivery door. Unless the IPM/ AMC is approved, air curtains are required over all roll up doors and windows or weld them shut.2. Provide a reduced pressure zone (RPZ) assembly at the water connection point of the soda carbonator. Conduits and fittings after the RPZ must be stainless steel or PEX. Do not use copper or brass alloys downstream from the RPZ. Provide a drain cup for the device. Drainpipe must be rigid and indirectly discharge to a floor sink with minimum 1” air gap from the finished floor. Certify the device and provide report.3. Provide another RPZ at the water connection point of the glass riners of the draft beer station.4. Certify all testable backflow devices and provide reports.5. Ensure hot water must be at 120*F and available at point of service within 45 seconds.6. Route the drain line of the draft beer inside the beer walk-in unit to outside. Ensure pipe must be rigid, slope to drain and have 1” air gap from the finished grade. 7.
