In the reach in under the cold table next to the freezer, observed pre-portioned sliced salami and cheese with an internal temperature range of 45-48 degrees F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC stated items had been in cold table for 3 and a half hours. PIC voluntarily discarded TCS foods improperly cold held. Corrective Action: Corrected at time of inspection.

In the cold table reach in next to the window, observed a small container of tomato aioli made in house with a discard date of 03/13 and cooked pork with a discard date of 03/14. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.
