Observed chemical supply bucket empty. PIC changed the supply bucket at the time of inspection. No active warewashing observed at the time of inspection. Advised PIC to monitor sanitizing regularly.

Observed par-cooked steak in the walk in cooler on the speed rack. PIC stated the steak is partially cooked and then finished cooking on the flat top once the order is received. Establishment does not have a non-continuous cooking policy, logs or proper labeling to show the food is par-cooked. Non-continuous cooking of raw animal proteins requires prior approval of written procedures by department. Provide a non-continuous cooking policy or discontinue non-continuous cooking prior to re-inspection on 5/4/2026. Corrective Action: Correct prior to re-inspection.

In the reach in under the left cold table observed a metal container of raw chicken being stored on top of pre-portioned bags of cooked noodles. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.
