Observed no sanitizer on site at beginning of inspection. PIC was able to obtain sanitizer by end of inspection. Informed PIC that food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed no sanitizer (0ppm) at sanitizer bucket at time of inspection, and wet wiping cloth on counter next to water dispenser. Informed PIC that all wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations of 50ppm - 100ppm for chlorine solution. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Observed employee enter beverage stand from outside, put away personal belongings, and don gloves by touching the outside of gloves and begin beverage preparation without washing hands prior. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Also discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed three plastic containers of marchiano cherries and 6 gallons of snow cone syrup stored inside a cabinet on the floor, underneath the prep sink and next to the air gap of the RPZ. Informed PIC that the food needs to be moved from underneath the sink, to an area where contamination cannot occur from premises. PIC moved the items to another area, properly stored off of the ground and away from contamination sources. Food must be stored at least 6 inches off the ground at all times to prevent contamination from the premises. Corrective Action: Corrected at time of inspection.
