Observed that floor drain was now flowing to allow waste removal in kitchen. Pipes at three compartment sink have been repaired to allow three compartment sink to drain. If either of these items become plugged again kitchen must be closed and not to serve food until repaired.

In walk-in cooler a pot of pozole measured an internal temperature of 54'F. Per kitchen staff, pozole had been made very early morning and placed into the walk-in to cool, approximately 9 hours prior. As it had not cooled within 6-hour time frame pozole was embargoed. Discussed cooling procedures with kitchen staff. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.
