Inspector's notes

Large reach-in cooler had the following TCS items measuring an internal temperature of 52-54'F: milk, half and half, heavy cream, guacamole, sliced cheese, raw shell eggs, hard boiled eggs, almond milk, and oat milk. Per person in charge internal temperatures of food had not been taken within past 4 hours. Food that had been in cooler more than 4 hours was embargoed. Ambient air temperature of cooler measured 53.4'F with min/max thermometer. New TCS products were moved to other refrigeration temporarily. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Large reach-in cooler measured an ambient air temperature of 53.4'F with min/max thermometer. Only other refrigeration establishment has in a chest freezer and small reach-in cooler. Establishment was able to temporarily move TCS items into other refrigeration. A 24-hour reinspection will be conducted to ensure that large cooler is able to hold TCS foods at 41'F or lower. Corrective Action: Correct prior to re-inspection.
