Inspector's notes

Observed TCS food itmes with internal temperatures between 45F -51F in the prep cooler by the cook line. TCS food items included cooked whole potatoes, roasted peppers, cut tomatoes, sour cream, cut leafy greens, and shredded cheese. The person in charge stated the food items had been placed into the prep cooler less than 2 hours ago.

Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed prep cooler by the cook line with minimum ambient temperature of 49.2F as measured by inspector min/max thermometer. The establishment's ambient thermometers stored inside the prep cooler displayed a temperature reading of 50F. The person in charge discontinued use of the prep cooler, moved all TCS foods to alternate coolers, and placed a work order for service.

Observed cooked soup with internal temperature of 86F in the walk-in cooler, the soup was stored in a deep plastic container with a tightly sealed lid. The person in charge removed the lid and placed the container into an ice bath for rapid cooling. Discussed with the person in charge when placed in cooling or cold holding equipment, food containers in which food is being cooled shall be arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food.
