Observed several time/ temperature control for safety food items in retail cold holding display shelf with internal temperatures of 47.8*F to 50.9*F. Food items were rice pudding containing milk of different flavors, probiotic cultured dairy products of various flavors, gelatin containing milk of various flavors, caramel and tres leches flan containing milk pudding, Nilla banana pudding, Oreo vanilla pudding - both pudding stating to keep refrigerated, cheesecakes of various flavors, cooked ham, honey ham, turkey ham, smoked ham, beef bologna, bologna, cotto salami, pickle and pimiento loaf made with chicken and pork, pepperoni, salami, and pastrami packets (see embargo form). Discussed with person in charge that cold TCS food items must be held at 41*F or below at all times. Person in charge voluntarily discarded food items. Correct By: Corrected At Time Of Inspection

Discussed with person in charge (PIC) that cold holding units must hold at 41* and below and be able to keep food items at 41*F and below at all times. PIC will have unit repaired.
