Inspector's notes

Observed cheesecake slices being held in an island cooler by the entrance with ambient temperature 44-58°F and internal temperature 52°F. Person in charge (PIC) does not know when they were placed in the cooler or when they entered the temperature danger zone. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC discarded cheesecakes at time of inspection and put in a work order for the cooler. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff, which resulted in the violation. Training will ensue for employees to check temperatures routinely to ensure proper functioning of the cooling units. Corrective Action: Corrected at time of inspection.
