Inspector's notes
At time of inspection, when high temperature sanitizing machine was turned on and a warewashing cycle was started, observed the dish machine spray water for about 15 seconds. Water then stopped. No detergent was observed moving through the line. The detergent pump on the machine was not observed working and no soap was visible inside the warewashing machine. Staff turned machine off for 30 minutes, turned machine back on, waster then ran for about 30 seconds and stopped. Again, no detergent was observed moving through the line and the detergent pump on the machine was not observed working and no soap was visible inside the warewashing machine. Person in charge (PIC) instructed staff to discontinue using dish machine and staff will use the 3 compartment sink to wash, rinse, and sanitize. Corrective Action: Corrected at time of inspection.
