Temperatures for a few items were logged as below 135*F to start the cooling process. Manager stated those items were discarded the next morning when the log was reviewed. Please ensure all TCS food to be cooled is 135*F when the cooling procedure is started. Manager stated they will re-train employees in the required cooling procedure.

Corrective Action: Corrected at time of inspection. Employee touched the handle of the dishwashing sprayer hose and rinsed their hands then started to handle food. Had employee properly wash hands at the hand washing sink. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks.

Corrective Action: Corrected at time of inspection. Food debris on the slicer blade guard cleaned an unknown time before. Manager had employee clean the slicer, but the debris remained on the guard when it was put back into use. The manager had the slicer properly cleaned and sanitized. All food-contact surfaces must be cleaned to sight and touch. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing.
