Cooked chicken with internal temperatures between 109 degrees F and 136 degrees F were hot holding on hotline near the pizza oven. PIC stated the chicken was cooked until internal temperature reached 165 degrees F and then placed into the hot table approximately one hour before inspectors arrival. Temperatures were verified in the cooking process. PIC reheated the chicken to 165 degrees F and placed them into the hot table. Reviewed time as a control and hot holding procedures with the PIC. Ensure all hot holding TCS items are held at 135 degrees F or above. Correct By: Corrected At Time Of Inspection
