Per PIC the Tuna salad with egg has been in the prep table over night and no one has used it. Discussed with PIC the Tuna salad with egg is a temperature control for safety (TCS) item and must maintain a temperature of 41*F or less. The prep table unit had an ambient temperature of 40*F on top and 39*F below. Embargoed the Tuna salad with egg. PIC voluntarily discarded TCS food. Per PIC the TCS items were just prepped 30 minutes prior to inspection. Discussed with PIC TCS items proper cooling method shall be in cooling equipment (reach-in), food containers in which food is being cooled shall be arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food. PIC relocated the chopped lettuce, sliced tomato, white american cheese, deli sliced ham and deli sliced turkey to be rapidly cooled in the reach-in. Discussed to bring TCS items to 41*F or less and then can be placed in the prep table. Correct By: Corrected At Time Of Inspection
