Observed diced tomatoes, pico de gallo, and shredded cheddar cheese measuring to be between 46-48 degrees F in prep reach in next to hand wash sink and flat top. The ambient temp in the reach in unit was 41 degrees F. Per PIC the items have been in the unit since yesterday and are switched out everyday and held there until 4 pm. The items that were out of temp were in plastic containers and those containers were in a metal pan. The other items in temp were only placed in plastic containers. Discussed with PIC that the two containers may be preventing the TCS from being in the appropriate temp range. Per PIC the metal pans were used because there was to hold up the smaller plastic containers. PIC then discarded items and switched them out. Informed PIC of proper temperature ranges, TCS foods must be kept at 41 degrees F or below for cold holding. Correct By: Corrected At Time Of Inspection
