Inspector's notes

Observed skim milk and milk at 58F on the counter near the cabinets food product had been placed there in the morning (greater than 4 hours held). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection. All RTE/TCS foods improperly cold held were discarded by PIC at time of inspection. RTE/TCS foods can be held utilizing four hour maximum hold time as a option.

At time of inspection, facility was not being used. Observed the reach in cooler holding temperature controlled for safety (TCS) foods off due to an electrical issue. Observed yogurt at 74*F, yogurt parfaits at 74*F, bottles of milk at 74*F, and cheese sticks at 74*F. All foods had been in the refrigerator over 4 hours and were embargoed. Because there have been electrical issues with loss of power to the fridge, TCS foods should be removed from the fridge when the area is not being used. Correct By: Corrected At Time Of Inspection
