Observed a squeeze bottle of sauce in the basin of the handwashing sink. Discussed with Person i n charge (PIC) Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC relocated all items blocking handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed the facility hot holding chicken with an internal temperature of 120*F measured with a probing thermometer. Per PIC the chicken was placed into hot holding 20 minutes prior to inspection. Per PIC, the steam bath was slow to heat up, but the chicken was within safe time parameters. The chicken that was improperly hot held was reheated to 165°F at time of inspection. Chicken will remain on the griddle until the steam bath heats up. Corrective Action: Corrected at time of inspection.
