Observed lobster an sandwich prep cooler by steam table at 44-46*F. As per staff the lobster had been placed in unit less than 1 hour prior to inspection. lobster was placed back in reach in cooler to chill to 41*F. Observed blue cheese in same sandwich prep cooler at 46-50*F. Staff were not aware of when items was placed in unit. Items was embargoed and discarded. Cold hold of food to be 41*F or lower. Advised staff to check food temperatures using a metal stem thermometer through out the day. Corrective Action: Corrected at time of inspection.

Discussed proper handwashing practices with staff. Advised manager to refresh with staff when hands must be washed. Corrective Action: Corrected at time of inspection.

Establishment was initially and Angie's Lobster and is now a combination Angie's Lobster/Prime Cuts establishment. Please submit an application, supporting documentation, and fees within 7 business days or on or before May 9, 2024. During this site inspection it was observed that the walk in cooler is no longer being used. This location is being used as a prep station with an added ice machine indirectly plumbed, prep table, shelves and rice cooker. Along center wall where a desk was located a two compartment food prep sink has been added and a steamer kettle for cooking/heating foods. Walk in freezer was converted to walk in cooler and 3 domestic style reach in freezers and one chest freezer has been added for freezer storage.
