Observed cooked gravy (6/21), hard boiled eggs (7/28) and cooked chili pork (7/25), made or opened more than 7 days prior, in containers in the walk in. Staff stated the chili pork was cooked two days prior and just mislabeled. Staff relabeled the chili pork. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Discussed date marking requirements with staff. TCS products cooked or opened to be discarded promptly after 7 days. Corrective Action: Corrected at time of inspection

Observed prepped deli meat (Turkey Breast) at 45*F at sandwich prep table. Cold food to be 41*F or lower. As per the person in charge, sliced turkey was portioned and placed in prep table earlier in day. Advised staff to portion and add small amount to top area with lid, and place the rest in bottom of cold hold unit or walk in cooler to cool to 41*F prior to placing in top portion of unit. Sliced turkey was moved to bottom of unit to rapidly cool. Corrective Action: Corrected at time of inspection.
