Observed tempura batter at 91F. Employees said the batter was made 30 minutes prior. Tempura batter is on the 4 hour time policy, but there was no time as control time documentation to verify the time it was made. The batter must start at 41F prior to use. Also observed cooked eel 56F and shrimp at 72F at the sushi bar. PIC moved them to the refrigerator and said they were prepared half an hour prior. Observed a large bowl of fried tempura shrimp holding 100F placed on the counter. PIC moved them to a refrigerator to cool down properly. Discussed placing food items that are cooling in the walk-in refrigerator and leaving them uncovered. PIC moved the products to the walk-in refrigerator. It was also determined the unit was holding 44.8F. Establishment is not permitted to place TCS food products in any refrigerated unit unless able to hold and ambient air temperature of 41F or below. The use of ice-baths is permitted if able to hold 41F or below. Corrective Action: Corrected at time of inspection.
