Observed ice build-up on the interior door leading to the freezer within the walk-in cooler rendering the area neither smooth nor easily cleanable. Discussed removing the ice build-up from the freezer door with PIC. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed chafing fluid stored directly over single-use plastics and clean dishes in the dry storage rack in the middle of the kitchen area. Also observed several bottles of butane lighter fluid stored directly above the warewashing area. Chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. All chemicals were relocated and properly stored by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed sanitizer bucket at less than 50 ppm chlorine on mobile . PIC added chlorine at time of inspection to bring sanitizer levels to 50-100 ppm chlorine in the sanitizer bucker. Discussed the importance of proper sanitizer levels with the PIC. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.
