Equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment shall be cleaned at a frequency specified by the manufacturer, or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. Observed in use mechanical dishwasher in the kitchen utilizing low temperature chlorine sanitizer to sanitize food contact surfaces at time of inspection. Final rinse chlorine sanitizer concentration measured at 0 PPM. The dish machine was ran again multiple times with a final rinse chlorine sanitizer concentration of 0 PPM each time. Acceptable chlorine concentration shall measure between 50-100 PPM. PIC made service call at time of inspection. Dish machine technician onsite at the end of the inspection and was able to restore dish machine sanitizer concentration to approved concentration of 50 PPM after replacing a hose.

Observed 2 - 22qt containers on marinara sauce cooling in the walk-in cooler. With probe thermometer the product measured 120*F and 130*F. Chef stated that the product was place in cooler approximately 1 hour prior to inspection. Chef had staff pull product and place in ice bath with ice wands to continue the cooling process. Discussed with Chef that acceptable methods of cooling include: placing food in shallow pans, separating the food into smaller or thinner portions, using rapid cooling equipment (i.e. a blast chiller), stirring the food in a container placed in an ice water bath, using containers that facilitate heat transfer, or adding ice as an ingredient. Corrective Action: Corrected at time of inspection.

Final construction inspection for a Class 4 10+ E&D permit was conducted with superintendent John L. and Plan Review supervisor by appointment. The establishment was closed and not operating at time of inspection. This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. Payment with a credit/debit card can be made on-line via select “Pay a Fee” at esd.maricopa.gov. Please note that if you select payment via online, the annual operating permit fee invoice may take up to 7 business days to post online. Also, checks and money orders are accepted via US Mail. Please ensure the following items are addressed by the completion of the project: 1) Caulk the gaps around the mop sink, as discussed. 2) Provide the missing rubber cove base to the floor/wall junctures around the cook line column.3) Caulk-in all escutcheon plates and plumbing penetrations throughout the facility with silicone.4) The knock box roller is not approved based on finish. Please provide a smooth and cleanable roller.5) Provide weather stripping or similar to the kitchen doors leading to the dining area. This includes the doors that open for the pizza oven.6) Seal all chasse lines. Trim any foam sealant flush and provide a smooth layer of silicone. 7) Grout around the chasse lines, as needed. 8) Caulk the ventilation hood gaps with an aluminum based silicone. 9) Provide clear ceiling panels for the condensate pumps, as discussed.
