Observed rice scoop with the handle in contact with cooked purple rice stored in the standing refrigerator in the back food prep area. Discussed proper storage of in-use utensils with PIC. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed two knives, stored on a magnetic strip directly above the 3-comp sink, with chipped edges rendering the utensils neither smooth, nor easily cleanable. Per PIC, they use these knives for prep, but were not used on the day of inspection. Discussed the importance of routine maintenance for food-contact surfaces and utensils. PIC removed the knives from service to be repaired at time of inspection. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

PIC stated chicken was made an hour ago. Chicken was observed stored in pan atop hot-holding unit. Suggested PIC avoid double-panning to increase heat flow. Hotholding unit observed at 140'F. PIC reheated chicken to 165'F at time of inspection as it has not been out of temperature for longer than 2 hours. Hotholding TCS food items must be 135'F or above. Suggested PIC use time as control for chicken for quality control as PIC stated that reheating or long exposure to heat dries up cooked chicken. Correct By: Corrected At Time Of Inspection

Recommended PIC to designate raw chicken storage to bottom shelves of a single refrigeration unit as chicken being the only meat served at the establishment. Person in charge (PIC) removed the raw chicken breast and placed it on the bottom of the shelf and placed chicken broth above the raw chicken. Discussed the importance of insuring that raw and RTE food is segregated to avoid contamination.
