Observed in use Sanitizer in 3 Bay Sink testing at 200 ppm for Chlorine. Speaking to employee about procedure, employee states they manually added chlorine without testing for proper measurement.. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Sanitizer was diluted by PIC to approved levels at time of inspection. Discussed with PIC about proper sanitization procedures and frequency of testing sanitizer. Corrective Action: Corrected at time of inspection.
