Inspector's notes

Observed two containers of food inside of the walk-in cooler, one of which was a container of bacon jam with a date mark of 08/28/2025 and another container of cooked pork carnitas without a date mark on them. Based on the date mark for the bacon jam, the bacon jam should have been disposed of on 09/03/2025. The container of pork carnitas did not have a date mark and it was not clear when the pork was cooked according to the person in charge. Both items were embargoed at time of inspection (see embargo form). RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Discussed with person in charge to clean the beverage dispensers and nozzles on a more frequent basis to prevent organic build-up inside. Person in charge broke down the beverage dispensers in question to be washed, rinsed and sanitized. All food-contact surfaces must be cleaned to sight and touch. Inspector's notes

Observed cooked rice being held in a rice cooker that was hot holding according to the person in charge. The internal temperature of the rice as measured using a probe thermometer was holding at 119°F. Per the person in charge, the rice had been in the unit for more than 2 hours. The rice was embargoed at time of inspection (see embargo form). Discussed with person in charge adjusting holding temperature on the unit so that it is hot held at a minimum of 135°F or higher. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
