Sanitizer solutions for food contact surfaces must be diluted manually per manufacturer's instructions (and a quat concentration of 200-400ppm) until repairs are completed. Ensure backflow test records for reduced pressure zone (RPZ) backflow assemblies are available upon request.

Soiled wiping cloths, especially when moist, can become breeding grounds for pathogens that could be transferred to food. Any wiping cloths that are not dry (except those used once and then laundered) must be stored in a sanitizer solution of adequate concentration between uses. Discussed with person in charge replacing sanitizer solution at a frequency that ensures it is of adequate strength (150 - 400 ppm). Un-pressurized kegs of cold brew may be dated for no more than 7 days (made on date + 6 days) but once pressurized and on line, product is now only able to be held for 48 hours maximum without a variance. Observed original and jalepeno kolaches both containing sausage to be in walk-in freezer as well as under ovens near drive thru window. Individual items had no mark of inspection. PIC stated that product is received from “Flour Child Baked Goods” and PIC provided invoice. No information could be found on company website about being inspected/certified for wholesale of meat containing products. PIC stated cardboard box that product comes in was already discarded. PIC was able to obtain picture of “Original Double Barrel Kolache” and “Jalapeno Double Barrel Kolache” boxes from another location. Boxes from other location did not have marks of inspection. All meat products made offsite must bear a label of inspection. Instructed PIC that items may not be sold at this time. Had PIC move all items to shelf in walk-in freezer to be kept onsite until further inspection. Product may not be moved, discarded, or otherwise tampered with. Original and jalapeno kolaches containing sausage are not an approved source as defined in statue, rule, or code. These products were embargoed in accordance with Chapter 8 of the Maricopa County Environmental Health Code. Paper embargo form provided to PIC at time of inspection.
